Salice Salentino is an Italian town in the province of Lecce, Apulia. The place gives the wine its eponymous name. About 100 wineries edit the 792 ha of vineyards approved.

The grape is Negroamaro . The Negroamaro had plenty of time to get used to the hot climate of Puglia. 800 years before Christ Greek settlers brought with him to Apulia. In nearly 3,000 years of Negroamaro is located in Puglia held defied environmental destruction, mass production and the burning sun. Winemakers chose always the best sticks and multiplied it. Thus, the Negroamaro could adapt to climate and soil on. Nevertheless, the exceptional qualities of the Red remained long in the dark. Only in the 1980s Cosimo Taurino began bottling wines in bottles. Before the wines went as deck wines in barrel north to the pale northern Italian wines to give color.

The wine is aged for at least eight months in tanks. However, quality providers let the wine mature three to four years. At a minimum storage of two years, the wine may bear the designation Riserva.
