Technical notes

Making Beringer White Zinfandel requires attention to detail to preserve the grapes` fresh flavors. Picked during the cool hours of the morning, the grapes were crushed and their juice was left in contact with the skins for about three hours to extract the blushing-tulip color. Gentle pressing and carefully controlled low-temperature fermentation followed, using special yeast strains that helped the aromas and flavors of strawberries, citrus, and spice come to the forefront. Managing the fermentation temperatures and arresting the process by chilling the wine at exactly the right time was key to maintaining the bright color, soft fruity flavors and aromas.
